One of the most daunting things about starting at University is having to cook for yourself and thinking what to cook every single night! Below are our top 5 cheap and easy recipes we have lived off for the last few years and swear by. Of course, there are a few dishes that involve pasta… you can’t really be a student and not consider pasta one of your 5 a day! Most of the recipes below you can freeze or have for lunch the following day too – cheap and easy to grab when you are busy throughout the day. Enjoy!
Cheesy Ham & Broccoli Pasta (3-4 Servings) INGREDIENTS 300g Pasta (we use penne) 1 bunch of Broccoli 1 tbsp Oil 1 Onion finely chopped 2 garlic cloves crushed 250g Ham, cut into chunks 300ml pot double cream 1 tbsp English Mustard METHOD
Roast Sausages and Vegetable Tray Bake (3-4 servings) Traybake's are very popular among students – every time (which is rare) we host for our friends at each of our student houses there is ALWAYS some sort of traybake on the table. Plus, not much washing up to do too! Below is a firm favourite roast sausages and vegetable tray bake: INGREDIENTS Pack of large sausages 500g Sweet Potatoes, chopped One Broccoli head 2 Red Onions sliced 3 Mixed Peppers Chopped 1-2 tbsp Olive Oil Sprinkle of Mixed Herbs (As a vegetarian option instead of sausages we use halloumi). METHOD
Vegetable Lasagne (4-5 servings) Making a lasagne will save you so much time in the evenings especially during exams season. We have our portions with salad and garlic bread on the side. INGREDIENTS 2 tbsp Oil 1 Onion sliced 1 Garlic Clove sliced 1 Aubergine cut into chunks 1 Red Pepper 8 Plum Tomatoes halved 350ml passata 200g Ready-Cooked Lasagne Sheets 6 tbsp Half-Fat Crème Fraiche 2 tbsp Grated Parmesan METHOD
Chicken Stir-Fry (1 Serving) INGREDIENTS 1 tbsp olive oil 1 garlic clove chopped 2 chicken thighs thinly sliced ½ red pepper seeds removed and thinly sliced 1 tbsp soy sauce 30g / 1oz mangetout, green beans or sugar snap peas 100ml chicken stock 1 nest of egg noodles cooked according to packet instructions METHOD
Quick Chicken Curry (2 Servings) INGREDIENTS 1 tbsp olive oil 1 onion chopped 200g/7oz boneless chicken thighs diced 2tsp medium curry powder Pinch of chilli powder 1tsp turmeric 150g/7oz frozen peas, defrosted under the tap 140g/14oz brown basmati rice, cooked according to packet instructions Mango chutney, to serve METHOD
